WAKUI

The Wakui family workshop is the ground floor of a wood-frame house on a street corner in a residential neighborhood in Sanjō. If Toshihiro or his father is not forging, you’d never know what happens behind the facade of this modest building, with its slatted wooden windows, big pots of geraniums, and fish tank by the front door.

Wakui-san makes excellent knives with a crisp yet buttery cutting feel, and his forging and grinding are always on point. The heat treatment and the smoothness of the blades on the sharpening stone speak to the time he spent apprenticing with Kazuomi Yamamoto at Yoshikane. In 2004, when things were looking bleak for his family’s hardware-forging business, Wakui-san started working triple shifts to build his foundation: in the morning, coarse grinding (aratogi) at a large knife maker; in the afternoon, a few hours at the family business; and at night, an apprenticeship with Yoshikane.

Bit by bit, he collected machines and wheels and tools, and after four years, he opened his own operation. But at first, the geometries of his knives were off; he needed practice, more time to experiment, and some mentorship here and there. Luckily, he was a smith in Sanjō, where the culture gladly lifted young smiths through the ranks. Young smiths like Toshihiro Wakui—and there are a number of them—are dedicated to soaking up what the older generation has to give.
